Ingredients:
  • 2 cups of diced pumpkin
  • 1/2 cup of red lentils (masoor dal)
  • 1 small onion, finely chopped
  • 2 cloves of garlic, minced
  • 1-inch piece of fresh ginger, grated
  • 1 tsp of ground cumin
  • 1/2 tsp of ground coriander
  • 1/2 tsp of ground turmeric
  • A pinch of asafoetida (hing)
  • Salt and pepper to taste
  • 1 tbsp of ghee (clarified butter) or coconut oil
  • 4 cups of water or vegetable broth
  • Fresh cilantro leaves for garnish
  • A squeeze of fresh lemon juice
Instructions:
  1. In a large pot, heat the ghee or coconut oil over medium heat. Add the asafoetida, cumin, coriander, and turmeric. Sauté for a minute until fragrant.
  2. Add the chopped onion, garlic, and ginger. Sauté until the onions turn translucent.
  3. Add the diced pumpkin and red lentils. Stir to coat them with the spices.
  4. Pour in the water or vegetable broth, and season with salt and pepper.
  5. Bring the mixture to a boil, then reduce the heat and simmer for about 20-25 minutes or until the pumpkin and lentils are soft and cooked through.
  6. Use an immersion blender to puree the soup until smooth. You can also transfer it to a blender, but be careful when blending hot liquids.
  7. Return the soup to the pot and warm it through. If it's too thick, add more water or broth to reach your desired consistency.
  8. Finish with a squeeze of fresh lemon juice and garnish with cilantro leaves.​
